The food provision of a health establishment (HE) is subject to multiple constraints that influence the meal tray proposed to the patient and in which nutritional diets often occupy a prominent position. In this context, it appears necessary to propose guidelines for food and diets in hospital so as to facilitate the choice of dishes and to reduce the complexity and ambiguity of food prescriptions and proposals.
